Vegetarian Recipe, Great for Kids and Adults Alike

I've been caught up in life recently, but making some new vegetarian recipes. One that I love (and so do the kids, even my toddler) are Spinach Mozzarella flagels.
Recipe:
About a cup of flour (I used 1/2 c of bread flour and 1/2 c of whole wheat flour)
Handful or two of low moisture, part skim shredded mozzarella
Couple handfuls of Spinach, chopped into small pieces
1 cup (maybe a bit more) of small curd cottage cheese, you can use a blender or food processor to smooth, I just used a spoon and mashed the curds
About 3 tsp of baking powder
Couple tbsp of olive oil
Few dashes of salt
One beaten egg for egg wash on top of the flagels
Then I throw a flax, chia and hemp seed mix on top
PREHEAT oven to 375⁰
Line a baking sheet with unbleached parchment paper
Mix ingredients in a bowl (minus the last two)
Form into a log
Cut 6 slices and flatten a bit, put on baking sheet and make a hole in the middle
Baste them with egg wash on top
Bake for 22-24mins
Take off of baking sheet and let cool
That's it. And you can take them on the go.
